Pinwheels

As much as I loved the 80° weather, I will have to admit that I am loving this rain. Especially after our hard work on Sunday our grass is now starting to turn green! :)

Last night, Tyler came home with a surprise. Tyler plays basketball at work 3 to 4 times a week. Yesterday, he just so happened to get elbowed in the face and came home with this.

Pretty nice huh? So, our night consisted of resting and icing for this poor boy. While Tyler iced, I made some mean pinwheels. They were delicious!

CRESCENT PINWHEELS:
– 1 can refrigerated crescent dinner rolls
– 1/2 lb cooked ham, thinly sliced (I used ham lunch meat)
– 1 cup crumbled feta cheese
– 1/2 tsp pepper
– 1 Tbsp Olive Oil
– 6 Tbsp chopped fresh basil

Heat oven to 375°F. Spray cookie sheets with Cooking Spray. Separate or cut dough into 4 rectangles; place on lightly floured surface and firmly press perforations to seal. Press or roll each to form 8×5-inch rectangle.
Arrange 1/4 of ham slices evenly over each rectangle. In small bowl, mix cheese, pepper and oil.
Sprinkle mixture evenly over prosciutto on each rectangle. Sprinkle with basil.
Starting at short side of each rectangle, roll up; seal long edges.
With serrated knife, cut each roll into 5 slices. Place, cut side up, on cookie sheets.
Bake 15 to 20 minutes or until golden brown. Remove from cookie sheets. Serve warm.

We then watched FIVE episodes of The Killing and now only have the season finale to watch. I am telling you, the episodes just leave you hanging so you have to watch another one right away! It is very addicting. I am not sure how I am going to take watching Season 2 when I have to wait a whole week to find out what happens!
Tyler continued to ice on and off all night and just for kicks, here is what his eye looked like this morning.
Have a good day and I am off to run errands and start packing for our trip to Colorado!
